Lean Turkey and Veggie Scrambles
Healthy eating doesn't have to be complicated. Often times we make excuses that it takes too long to cook a healthy meal so instead we opt for going out to dinner or getting carryout. For us, cooking a lean and clean meal is just as fast and ultimately, we know exactly what we are putting in our bodies. For example, a restaurant might use large amounts of butter and salt to sauté your chicken which may be yummy but not so good for the waistline. If you cook chicken at home, you can sauté it in an organic extra virgin olive oil or coconut oil.

Some might think, well healthy eating is boring but then at the same time they don't like how they feel, look and are struggling with weight issues, constant bloating or even skin issues. Your body should run like a well oiled machine! The food you eat should give you the energy to power you through the day, not make you feel lethargic and sluggish.
So at least once a week, we make a lean and healthy turkey and veggie scramble for dinner! What we love about these scrambles is they are super quick to make, yummy and we know that after eating it, we will feel great about what we ate.

The great thing about this recipe is you can make it with a different lean meat and veggie each time or stick with your favorites.
Shopping List:
Pick Your Lean Meat:
1 lb of lean organic white meat ground turkey or ground chicken
Pick at Least 4 Veggies:
Bell Pepper, Carrots, Broccoli, Green Beans, Edamame, Spinach, Cauliflower, Onion, Peas, Zucchini, Squash
Here is one we like to go with:
1 medium yellow onion - diced
1 medium red bell pepper - diced
1 small broccoli bundle - diced
1 large carrot - diced
Other ingredients you need:
Mrs. Dash Garlic & Herb (Salt-Free Seasoning)
Organic coconut oil
Forbidden rice or brown rice (optional)
Pans Needed:
You will need two medium to large sauté pans.
How To:
Dice all veggies
In the medium saute pan, add a TBSP of olive oil or coconut oil, turn to medium heat and add veggies
In a large saute pan, add a TBSP of olive oil or coconut oil, turn to medium heat and add lean meat (ground turkey or chicken)
Sprinkle Mrs. Dash Garlic & Herb (Salt-Free Seasoning) on the lean meat until one side of chicken or turkey is lightly seasoned. Chop/dice meat with spatula and cook thoroughly, until you do not see any pink.
Continue sautéing veggies until they are beginning to soften but still have a little crunch. We like to always add an onion to the recipe because then when the onion starts to become translucent, we know all the other veggies are cooked just enough.
Once turkey or chicken is completely cooked and veggies sautéed, take the veggies and add it to the pan of lean meat. Mix together and you are done!
OPTIONAL: If you want, feel free to make a side of brown or forbidden rice to put the turkey/veggie scramble over.
